Quinoa and Veggie Stuffed Bell Peppers


  • 1 cup quinoa, cooked
  • 4 bell peppers, halved and seeds removed
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, diced
  • 1/2 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro for garnish


  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked quinoa, black beans, corn, tomatoes, red onion, garlic, cumin, chili powder, salt, and pepper. Mix well.
