- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (14 ounces) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- Sour cream and chopped green onions for garnish
- In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, minced garlic, and chopped red bell pepper to the pot. Cook for 2-3 minutes until the vegetables soften.
- Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, salt, and pepper. Mix well.
- Pour in the beef broth and bring the chili to a simmer. Cover and let it cook for 20-25 minutes, stirring occasionally.
- Serve the chili hot, garnished with shredded cheddar cheese, a dollop of sour cream, and chopped green onions.
